Behind the walls of this 19th-century baronial edifice is a surprisingly modern bohemian interior. The beds are lined with Egyptian cotton sheets and the toiletries are 100% vegan – as of course is the restaurant menu. It's a creative, fresh, and tasteful mix, with all organic ingredients sourced from the hotel’s garden or local farms. For every dinner served, the hotel also plants a tree to offset the carbon emissions.
